To Dairy or Not to Dairy

With so many people cutting out dairy you may find yourself asking should I do the same? I’ve been on the same side as you have for some time. I still myself eat dairy but my consumption is a lot lower than previous years. About two years ago I dabbled in Veganism for half a year, for health reasons. I stopped because I was not educated enough or had the will power to leave out meat, dairy and other vegan items that you may not even think about. I did however feel so much clearer in thinking and enjoyed all of the perks that veganism had to offer.

Mucus
This is a big one for me when dairy is involved. To me when I eat to much dairy I feel a build up of mucus in my chest. Now that allergy season is in full force I really try to avoid it when I can. I cut out all dairy in my house except for cheese and yogurt.

Milk

A few years back I eliminated milk and switched to almond milk. My husband and son adjusted pretty well, the first few weeks were a little rough. Cereal was a big complaint, because some cereals didn’t taste so great with nut milk. After some time working with almond milk we figured out the best brands and flavors to pair with our foods. Generally I keep unsweetened/unflavored almond milk for cereals and meals that need dairy. Subbing nut milk for dairy milk is a little different in terms of thickness. Think skim or 1% milk, this is roughly the consistency. Keep this in mind the next time you switch your milks up to include in recipes. Don’t worry you will get the hang of it as I did!

Cheese

This is a hard one because I love me some cheese! But while being vegan I did find some awesome dairy free brands that were just as good if not BETTER than the real thing. Field roast CHAO slices is my top brand when switching over to a new cheese alternative. These sliced dairy free cheese is amazing I could sit and eat just them on a cheese plate! I am salivating they are so good, apparently they are making mac and cheese products too and I am beyond ready to try them! Follow your heart Is my second favorite, these have been popping up a lot more in local grocery stores. My husband even likes the Provolone and Gouda slices, which blows my mind because he is a picky eater and loath’s trying new things. I don’t however recommend the brand Daiya, this is super common in grocery stores, it has a bad after taste and there is just something weird about the flavor. Give some a try and let me know you opinions!

Ice creams

What a wonderful time to be alive, especially if you are dairy free! The amount of ice cream options nowadays is WIDE! From chocolates, fruits and crazy flavors, you will very easily be able to try something new. I am seeing more dairy free options at regular grocery stores, a lot more in the past year. This is great for people like me who try to keep dairy at a minimum, while still being able to enjoy a cone…or two. Ben & Jerry’s even has their own dairy free flavors which taste great!

Home Gym Equipment

Sometimes we don’t want to go to the gym. Let’s be honest here, most of us would rather stay at home in our comfy clothes and kick back to some Netflix. What if I told you that you can even exercise in your Pj’s AND binge watch your favorite show? I bet you would be all in! Last year I started accumulating random and cheap, exercise equipment for my home. Now I do have a small house so a lot of these items are space saving options as well.

Bosu Ball

This half ball shaped miracle worker provides a killer workout. There are so many ways to use it, it’s unbelievable. Balance on it, stretch on it, add support for your back when doing floor crunches, the list goes on! I snagged one from Goodwill a few months back for $9, it was a steal.

Free Weights/Kettle Bells

Grab a set of free weights, sit on a chair in your home and do a simple arm workout routine daily. YouTube is LOADED with all types of great video tutorials on how to get started. I love using kettle bells for legs, abs and booty movements! My husband prefers kettle bells over free weights for him arms and shoulders. I have even found free weights at thrift stores and garage sales so always keep a look out for gym equipment while out. With a little bit of imagination or help from an online source you can definitely get a good sweat in, all in the comfort for your own home!

Thick Yoga Mat

This is a lifesaver or should I say back-saver if you have hard wood floors in your home like I do. A soft mat will aid in extra support for your joints, knees and any other impact areas you may have a weakness in, for me, it is my wrists. Yoga on one of these babies is so relaxing!

The Step

My best friend found one of these these gems at a local Goodwill! Eli, my son, LOVES to do some steps with me! We laugh the whole way through and just have a good time, It makes me feel good, encouraging him to be more active and have fun while doing it! Are you ready to pour sweat from every inch of your body? Then hop on and off The Step!

A Stepper

A mini elliptical right in your home! Most have step counters on them, and even handles, grips or a stand for balance. I opt out of using anything for balance to challenge my legs and abs to do all the hard work, this will increase your heart rate and keep you on your toes! This mini stepper is great for small bedrooms and living room’s. Binge watch your next show while using this little guy!

My Weight Loss journey: Beginning to present

An in depth look at my journey to a healthier life. I want to start of by saying that this is very hard and personal for me to share sometimes. Laying it all out to complete strangers is a very vulnerable thing to do. But if this reaches someone, anyone trying to get better, then it would have made it worth it.

April 12, 2018

I remember that night like it was yesterday. Around dinner time I was sitting in the living room watching a show and suddenly I felt an electric jolt on my chest. I tried to brush it off but it happened a few more times. I started to get worried, shortness of breath, and heart palpitations. I was pretty much in full freak out mode! Thinking I was having an actual heart attack, right there in my living room with my family. My heart was racing and I just couldn’t catch my breath. Sleep never came, so early the next morning I drove myself to the emergency room. They ran all the tests and concluded that I had acid reflux. What? That’s it? What about the feelings in my chest and shortness of breath, and fear?

I later did my own research and found that I was having a panic attack. I had never before experienced this extreme level of fear. That day I drastically changed the way that I ate, for my acid reflux and Anxiety.

Lifestyle Change

Small meals six times a day is what the doctor recommended. So that’s what I did, I was desperate to feel alive again. I stuck to a clean eating routine, three meals and three snacks. Right before I actually made my change with eating, my best friend and I decided to do a little weight loss competition. I ended up wining! I remember the scale when I first stepped on it, 301 pounds. I couldn’t believe it! All this time I had been avoiding and self sabotaging with food. I managed to loose 40+ pounds in the first few months! Along with some exercise and support from family/friends.

Living with Anxiety

Managing my anxiety attacks was a nightmare. I would go through periods of just constant fear. Nothing would be happening around me but I would feel like WW3 just broke loose. This often took place at nighttime when my mind was just running crazy scenarios on a loop. Eventually I could no longer take the agony, so I scheduled myself an appointment with my doctor. She prescribed Lexapro, a common SSRI used to treat Anxiety. This was such an amazing tool in making me feel a little more normal. Along with eating more nutritious foods I was feeling a lot better.

Embracing an active life

Once the fall hit I was determined to get outdoors and become more active. Gym with friends, walking the trails with my family and even taking more walks with our dogs daily. I invested in myself more. I also started an Instagram (@eatfreshflowers) where a lot of my progress is documented!

One year later

I lost my weight before the Lexapro, It seemed that I wasn’t able to loose anymore weight after, so I did gain some back. Around ten pounds that I am STILL trying to loose. I went through my up’s and down’s of self doubt, and wishing that this plateau would go away. I also started eating foods I had cut out of my life. One full year, 365 days of feeling great mentally and weight moving to just a sudden stop on the scale.

Now

This journey has been like a winding road. Nothing about it has been linear. Just a long road with turns, dangerous curves and frustrating detours. But the knowledge I have gained has been abundant. If I hadn’t of had one of the scariest moments in my life I would have not changed myself for the better. I am not perfect. I still struggle with food and motivation to get more active. Some days I am fueled up and ready. This journey has turned into a self discovery more than just a weight loss goal.

Again a reminder that I can do this, YOU can do this, anyone can start their own journey. But the work falls into your lap. What will you choose daily to better yourself? DO NOT GIVE UP! I fight for a healthier life daily, even with all the road bumps in between.

Meal Prep with me: Instant Pot Edition

I am so excited to document my meal preps for you all! Meal prepping is a BIG part of my journey to a healthier life. More often then not we face busy schedules which sometimes leads us to unmotivated, lazy dinners. I have been there, some nights I am still there, stuck in the kitchen wishing I had a quick meal to turn to.

“Fail to prepare, prepare to fail”

Meal prep can be fun but it also can be monotonous! Whether you like to do a bulk meal prep for the whole week or just prepare a few items to grab and plate later, all are effective methods. I lean heavily on the second method more than the bulk prep, but I will sometimes do a bulk if I feel like it. Like I said it’s better to have something, anything, quick in the fridge to grab that is nutritious.

As you may have guessed from the title, today’s meal prep will be done ENTIRELY made with an Instant Pot! If you don’t yet own one, I would highly recommend it. You can still follow along with your usual method of cooking these items. We are keeping this one simplistic! Which makes this great for Instant Pot newbies. So without further ado lets get started!

  • One whole chicken
  • Brown rice long-grain
  • Fresh Vegetables of choice or Frozen

I own a 6 qt Instant pot like this one…It fits pretty large meats perfectly fine for me. The ingredients are pretty simple and basic. You will need the following:

  • Brown rice long-grain
  • Water/Broth (Chicken or Veggie)
  • One whole chicken
  • Oil (high smoke point)
  • Seasonings of choice
  • Veggies of choice ( Fresh or Frozen)

The chicken and Rice take around the same amount of time so you can start with either! I started with the brown rice first!

Brown Rice (30-35 Minutes)

Measure your desired amount of rice in a measuring cup. I used two cups in this tutorial. The water ratio is 1:1, simply add the same amount of water as rice, easy peasy! Combine rice and water into the instant pot, (MAKE SURE THE METAL BOWL INSERT IS IN! I have heard horror stories about people forgetting to place the cooking bowl inside and pouring liquids into the bottom of the machine, rendering it unusable!) Give it a good little stir and make sure no dry rice is clinging to the sides. Place the lid on top and turn the knob to locked, press “Manual” mode and then hold the plus button until you have reached 22 minutes. This time always produced fragrant, tender, fluffy rice every time! That’s it! Set and cook.

All done!

During this time I will usually start some seafood or veggies in the oven to roast. But due to the summer being so hot here in Texas, the oven is a rare occurrence. When the timer rings leave the machine alone, allow it to naturally pressure release. After the little silver button pops down you are good to open it up. Be careful! It will have some hot steam inside, so watch hands and fingers. Also condensation on the lid is normal! Scoop it up into a large container and store in the fridge for an easy side dish!

Chicken (30-45 Minutes)

Hit the “Saute” button on the bottom left of the machine. Let it heat up while you are prepping your chicken. Drop a tablespoon of oil into the cleaned Instant Pot. Remove the whole chicken from the package and pat dry with a couple paper towels. Empty contents inside the bird and continue to dry, aiming to soak up excess blood. Rub seasonings on the breast side first, as much or as little as you like.

Once the Instant pot reads “HOT” Place the chicken breast down. It will sizzle and squeak, this is all normal. Shake some seasonings on the birds back while it is cooking face down. I do around 5-7 minutes each side, you want it to be lightly crisped and golden.

Flip the chicken over with a pair of tongs on its back, wait 5 minutes, add about half a cup of water or broth, enough to cover the bottom of the instant pot by around a half inch or so. Add the lid and set knob to locked. Press “Cancel” and then “Manual” set to 28 minutes. (Note: This will depend on the size of the bird, don’t fret, if yours is not cooked all the way, add another 5-10 minutes cook time.) My chicken was around five pounds as a reference. The meat was left super juicy and falling off the bone! Once the timer dings, again, let it naturally pressure release, until button drops.

Once done, let rest, then debone and place in container of choice. I like to strain the leftover broth and jar it for homemade bone broth! Or you can even cook the rice in the fresh broth!

Ready to eat/store for later

Vegetables (5-10 Minutes)

Dice, Slice, Cube, all of your veggies! I love to use this awesome stack-able steamer HERE to steam my Vegetables. The best thing about it is that you can cook multiple items at once! Don’t have a steamer no problem! Just add a little less water, enough to cover the bottom. Add veggies and place lid on top. You guessed it, press “Manual”, time, and then lock knob.

The timing on vegetables are different for each once, so when cooking together aim for similar cook times. I know that Carrots and Potatoes take longer to cook then say Broccoli. So I would play around with times. Start at around 5-8 minutes for slow cooking veggies, and 2-4 minutes for quicker ones. I personally like to “natural pressure release(NPR)” majority of the time. Whether your NPR or quick releasing (QR) make sure to take that into account for cook time. And Voila your done!

Cooling/Storing

I store each item in the fridge after a little cooling. Place into one container or meal prep containers and Refrigerate. A good idea that has helped me especially since I log in myfitnesspal is to make a note on portion sizes/measurements. So when I eat a meal I already have the info right there to input. If not using meal prep containers just grab and plate, I weigh as I’m filling my plate! Portion out desired amount and warm back up, so convenient! Don’t get caught up wondering what’s for dinner anymore!

Kid Mania – Fort Worth, Tx

Last night Alyssa and I took our children to Kid Mania for Friday dinner and playtime! This place is jammed packed with family friendly fun! One of my favorite things about this HUGE indoor playground is that adults can join in too. YES, adults can climb in with their children! You will feel like a kid again while working up a sweat. All that climbing, laughing and jumping around is quite the workout!

Another great feature is Kid Mania’s security. It is top notch in making sure no child is leaving unattended or with a stranger. This is such a relief for parents especially with multiple kiddos. This way adults can relax while the kids play! SCORE! Talking about relaxing, they also have a “No Mania zone” where only parents area allowed.

The room is made with thick glass for quiet relaxation also including cushioned seats, free WiFi, Tables and a T.v. for the ultimate kid free area. We may set up our laptops and blog next time, it would be the perfect opportunity to get some work done! My son Eli is already begging to go back, so next time we shall bring some more family and friends along.

Grab a bite to eat with their made to order food! Pizza, kids meals, snacks, etc, guaranteed to find something for your child to eat even the pickiest eaters like my son. We usually grab a pitcher of water and soda for the kids, because us and the kids are always thirsty from all that running around!

Party rooms, Arcade, prizes and even party rooms for rent! I’m sure you will love this place as much as my family has!

We all have goals and dreams that we feel are out of reach. Dream vacation, the perfect physique, the list goes on. What if I told you you have the power to make this happen? Would you believe me? You have probably heard of vision boards, prayers, wishes or the law of attraction. I first heard of this ideology from “The Secret” (book and film).

Basically it is the principle of your thoughts creating change in your life. In other words where focus goes energy flows. You want that job, imagine yourself there in that seat with a big smile on your face and warmth in your body from gratitude. Take in that feeling of already having that job. Now I have tried this technique for a little while now and have had some success. Not huge things but experiences to believe that we can make change happen for ourselves with just dedicating some time daily to exercise our minds.

Daily gratitude

I love to write out my dreams and aspirations in a journal daily. Things that I am thankful for to keep myself grounded. Five minutes of mediation can go a long way, start off your day with positive vibes! Meditation teaches us to calm our brains and center our thoughts/mind. If you get distracted easily then I definitely recommend daily meditation.

No Limits

If I told you that there is no limit to what you can achieve would you believe me? Maybe a little but there comes a lot of initial doubt, am I right? To often we tend to doubt ourselves! If we reverted back to childhood when we believed anything was possible, why as adults can’t we get that mindset back? Well through our life’s and experiences we have learned that things aren’t always rainbows and puppy dogs, or that unicorns exist…or do they?

I’ve started to adapt my mindset into a positive state, slowly, daily, but forward non the less. We can all get what we want in life, even with our struggles. I guarantee that when you shift your mind into believing knowing that you have that power, then it will come. Doubt is the number one killer of your dreams.

Start Small

Take it easy this is not a race! Start small with something you want. Sometimes when you need that extra dough but you don’t get paid until the end of the week, somehow it appears on the ground beneath your feet at a park. Some would say this is coincidence. I believe it’s a manifestation of what you needed. You put forth that energy of needing money and then it came back to you. This is why I try not to overthink things, even though I myself struggle with just that. Positive thinking has changed my life. Don’t we all just want to be happier? To believe in miracles and the good of mankind?

Putting It All Together

So you have made a vision board, set your intentions to positive and TRULY believe in yourself AND that the Universe, or God, or Budda, or Allah, etc. will deliver then you are ready. Again start small. Close your to eyes and imagine yourself in the car listening to your favorite song, smiling, singing, feeling smitten.

Hone in on that feeling, soak up all those positive feelings. Then watch what happens next, that song will be on the radio and you won’t believe your ears! Again doubt, or any kind of resistance will deter your outcome of success.

That’s ok if it takes some time to adjust your thought patterns. We have doubted ourselves for too long! It’s time to break free and live happy! Stay positive my friends and happy manifesting!

I am so beyond EXCITED to attend the Gluten free festival hosted by Enjoy Life . As a new blogger I am honored to partner up with Glenda of The Mommies reviews and Alyssa of Alyssa Torrence’s Journey! Since including Gluten free breads and pastries into my diet I do notice better digestion of these normally dense foods. Van’s and nature’s path are some of the most delicious gluten free waffles I have ever tried! The pumpkin spice waffles are a treat for my favorite upcoming season, fall. Soo many wonderful vendors will be there and I can’t wait to try loads of new goodies!

Gym Accessories: Top 5 must haves

If your like me you love to find new items that make you excited to hit up the gym! A new pair of shoes that you treated yourself to or that pair of headphones. This post will be all things accessories for you ultimate motivation and style. Everything that I am about to list below is items that I myself have purchased, tested and approved in the gym environment!

Silicon wedding bands:

I dread wearing my wedding set to the gym. Between clanking it on gym equipment or god forbid it sliding off and getting lost I just don’t wear it. Now I have opted for a set of silicon rings. I just received these and I am blown away by the comfortably. I can not even tell that I am wearing them! I got a set for my husband as well and we both are in love. The brand Honorgear has an affordable set of six multi colors for women and I could not be happier. Also the customer service rocks! In case you need an adjusted size or an item is damaged, they’ve got your back with no hassle.

Honor Eternity Rings

Wireless headphones aka Bluetooth Headphones:

I don’t bother with wires anymore! My gym experience has opened up since I made the switch over to Bluetooth! Two companies that I want to show some love to are MPow & Zeus. Mpow is what I am currently using. They are so comfortable, loud enough that I can block out excess noise, and focus on my workout for the day. My favorite features are the controls on the side and also they are FOLDABLE for easy portability! Overall I would HIGHLY recommend these headphones. Lots of colors available as well!

Zeus I up next, with dynamic customer support and dependability. My husband’s choice of headphones for daily use at work. We purchased him a pair a couple years ago and they work amazing for him. They are lightweight, waterproof, and husband proof! We have reached out to customer support in the event that occasionally they have gone out on him. But the customer support was so good that they sent us another pair the next day! That’s what I call great customer service! I would recommend these headphones to someone who needs light earbuds especially for running!

Foam Roller:

My best friend recommend this item to me after I was complaining about muscle aches from the gym. What a difference a foam roller makes after leg day! 321 Strong is the brand that I purchased off Amazon. Deep tissue/trigger point release is unmatched! I’ve had a few cheap Styrofoam rollers in the pass that don’t even come close to this bad boy. Unique colors and combos makes this a great piece to add to your post workout recovery.

Sweat Towel/Cooling Towels:

Another major item that I am always grabbing for is my sweat towel! Pouring on the stair master or Jogging on the treadmill. This should probably be at the top, but this list is in no particular order, I consider each and every item an essential. The brands I have tried are Mission and Yoga mate. Mission’s Cooling towels are light and super refreshing for those hot days and hotter workouts! Machine washable/multiple color options/prints to choose from this makes and excellent gift idea for an active family member or gym buddy.

Unfortunately I wasn’t able to find the hand towel version of the yoga mate sweat towel. But I really enjoy this company! They offer yoga mat length towels to catch all the sweat. I own the hand towel version of the blue tyedye print and my husband owns the green and blue version. We both use this especially in the Texas heat for trips to work.

Gym Bag:

Now for something to hold every item in this list, a gym bag! My current favorite is the Adidas drawstring bag because I like to carry my stuff around with me from one end of the gym to the other. I used to use a locker but now I keep my stuff close by for easy access. Whether you like these style of bags or the regular duffel bag type, Adidas offers both! Of coarse you don’t have to get each exact item or brand listed in this list. Any will do just fine! I find great deals on name brand items at stores like Ross and Marshall’s, and even thrift stores because I am a thrift store queen!
